Formerly named Musu on Bridge Street has undergone a major transformation and has emerged as KAJI, with the byline “Fire Based Dining”. It’s very good, and at the opening preview we were treated to an 8-course tasting menu with wine pairings, all of which were excellent, preceded by cocktails. The first was a deceptively powerful mix of 3 different sakis and honey, the second a blend of black cherry liqueur and whisky with a toasted sesame seed rim. Both were rather good.

Course number 1 was a selection of sashimi, comprising tuna, salmon, and sea bass, and a small helping of wasabi to give it a kick. The presentation was spectacular, being served on a smoking Frankenstein fog platter. In the excitement we managed to knock one of the salmon morsels into the pit, but a small amount of chopstick dexterity saved it. It was paired with an English dry sparkling rosé which worked very well indeed.

This was followed by Cornish sea bream with a lime zest, wrapped round some nicely sticky rise, again paired with the sparkling rosé.

Next off was an amusing take on tacos, Orkney scallops served in a “secret” sauce and topped with sea salt, served on rice and wrapped in a seaweed.

 The “mains” then started.

 First off were fried Carlingford oysters (you could taste the sea) with bonito hot sauce, finger lime and caviar, paired with a very palatable Vouvray.

 The next course was a bit of fun, Crispy Chilli Buns with pickled jalapeno butter. Decadent is the word the springs to mind. These went down very well indeed. The sea salt topping added another kick.

 Extra large Orkney scallops ended the fish courses, served in their shells with sea urchin butter. This was a rather powerful combination.

 Just to balance things out, the penultimate offering was rack of lamb paired with a Uruguayan Tannat, with pronounced tannins.

 We ended with a very delicate smoked chocolate mousse served with tequila-soaked pineapple and passionfruit sorbet, paired with lovely dessert dessert wine.

Service by Jasiu was brilliant, the food presentation was excellent, and the ambience perfect. This carried through to the bustling bar as we were greeted for post dinner cocktails.

Now part of the MUSU family which we were informed will make a welcome return in 2025.
